EASY PEASY COOKIE CAKE.

Anybody reading this that knows me well will have sampled my mummy's famous cookie cake.
She used to make it on special occasions but as soon as I learnt how to make it, I made it at any given opportunity.
It's my best friend Jessica's favourite dessert and this weekend is her sister's birthday bbq.
For me, this means - COOKIE CAKE.
It is actually the easiest cake in the world to make.
and it is AMAZING.

Ingredients:
Chocolate chip cookes - Maryland are the best - roughly 2 packs
A cup of strong black coffee
Double cream
Sugar

Method:
Dip each cookie in the hot coffee and lay out in a log shape on a plate.
Leave to set in the fridge for a couple of hours (1 hour min)

Whisk the double cream with sugar (add as much as you like but taste it obv) until it is a thick spreadable consistency.
Then spread over the set cookies.

Add grated chocolate or a crumbled flake bar and leave to set in the fridge for another hour or so.

Voila!
