Lime and Coconut Courgette Curry

Right I knowww all I ever cook is vegetable curries but honestly this one is YUM.
Feel free to add chicken/meat/prawns but this is all I have in the fridge/cupboard and I was bored and fancied cooking.
This is once again a complete cheat because I am using a jar of sauce but I just can't say no to £1 jars of sauce. hahaha
I'm not going as far all calling this a recipe, because it would be insulting to think that people cannot add a jar of sauce to some vegetables, but I am merely informing you of what I had for dinner and how I cooked it. With a step by step guide. LOL.


Sainsburys Lime and Coconut Curry sauce is BOOOM.


Roughly chop onions, potatoes and courgettes.
Keep them roughly the same size so they all cook at the same pace.
Start by frying the onions in a little oil until golden brown and then add the courgettes and potatoes.


Add the jar of sauce and then fill it halfway with boiling water then add that to the pot.


Add a tin of sweetcorn (with the juice), a handful of frozen peas and if you can find them, frozen edamame beans.


Stir this all together and add a generous helping of sweet chilli dip.
Leave to simmer (stirring occasionally) for half an hour



Serve with rice or couscous.
DONE.
