LUNCH.

Stuffed Aubergine.


This is so easyyy peassy.
Just fry some chopped onions in a pan with oil and add:
cooked cous cous
chopped tomatoes
mixed veg
balsamic vinegar
salt
and
cream cheese

mix it all together and leave to one side.
Hollow out an aubergine and stuff it with the mixture
Top with cheese and breadcrumbs and bake in a pre heated oven at roughly 200 degrees for about half an hour.

Serve on a bed of baby leaf spinach and drizzle with blasamic glaze.
DONE.
