I haven't done a food post/recipe in fookin ages, so here you go...
This is like bolognaise with loads of veg but it doesn't have a name yet - any suggestions?
Ingredients:
Minced meat
1 Onion
4 Mushrooms
1 Carrot
1 Aubergine
1 Courgette
1 Handful of frozen peas
1 Tin of sweetcorn
1 Tin of chopped tomatoes
1 Garlic clove
1 Cal spray oil/olive oil
Sweet chilli dip
Honey
Salt
Beef stock cube
Tomato puree
Pasta sauce - you dont need this but it does make a bigger/tastier portion - I used Sainsbury's Onion&Garlic pasta sauce for 74p
Method:
Chop all the veg
Fry the onions and garlic in the oil until softened
Add the mince and cook until brown
Add the mushrooms, carrot, sweetcorn and courgette
Stir and cook for a few minutes
In another pan fry the aubergine for 5 mins or until soft
Add the chopped tomatoes and aubergines to the veg and stir
Add the handful of frozen peas and stir
Add a tablespoon of sweet chilli dip, honey and tomato puree
If you are using pasta sauce add it now and stir
Add a pinch of salt to taste and crumble in a beef stock cube
Stir everything and leave on a very low heat with a lid for 20 minutes
This tastes much better when it has been taken off the heat and left for a while but could be served now.
Serve by itself or with rice, pasta, couscous or salad...
