Healthy Options.

Ok so IBEEEEFA is 100 days away and this means the STRICT summer diet has started.
I will still blog about amazing yummy food but I wont be eating any.
From now on it's pure veg, soup and Ryvita.

Yesterday I made a carrot and lentil soup from scratch.
It was WELL easy peasy so I thought I would share the recipe...
Quanities can vary, I used about 5 carrots, 3 onions, 1 clove of garlic, a pint of veg stock and 2 cups of lentils.

Fry chopped onions and garlic on a low heat in a pan until the onions are golden.
Add chopped up carrots, vegetable stock and lentils. Stir.


It should look a little something like this. yum.

Cover and leave to simmer for half an hour. When you come back to it it will have turned into a big yummy thick pan of cooked lentils with carrots. Add some boiling water and or stock and stir.
Add it to a blender an voila. SOUP.


It really is delicious. and well 'ealthy innit.
