Ok so this wasn't as simple as the last vegetable korma but it was sooo much better so listen up:
Ingredients:
2 small sweet potatoes - chopped into chunks
1 small aubergine - chopped into chunks
1 courgette - chopped into chunks
2 small red onions - chopped
1 small garlic clove - crushed
1 small handful of spinach
1 small handful of frozen peas
half a tub of natural greek yoghurt
1 kitchen guru recipe pack - chicken korma (i only used half of each pot)
half a pot of korma sauce - any korma/curry sauce will do
butter
olive oil
vegetable stock cube/boiling water
Fry the onions and garlic in oil until golden brown
add the aubergine, sweet potatoes and courgette and stir
add the korma sauce and stir
add the seasoning to the greek yoghurt and stir then add to the veg and STIIIIIRRR
mix the boiling water with the stock cube and slowly add the the vegetables whilst stirring
add the peas
add a knob of butter and leave to simmer for 10 minutes
add the spinach at the end and stir it a little bit more
just sort of see how it goes and cook it to a consistency that you like, add seasoning to taste and keep stirring/simmering until it looks like it should.
