LUNCHTIME.



I am low on funds atm so I'm not allowing myself to do a midweek foodshop, instead I will be making something out of nothing for the next couple of days.
Today I managed to create this masterpiece from not very much at all.

Ingredients:

2 small red onions
1 large white onion
1 clove of garlic
3 beetroot's
1 handful of spinach
1 knob of butter
1 scoop of cream cheese
1 carton of chopped tomatoes
1 bowl of couscous
a splash of balsamic vinegar
a dollop of sweet chilli dip
a little oil
and a pinch of salt

Method:

Chop the onions and add to a pan of hot oil, gently fry and add crushed garlic.
Cook until soft and stir in the balsamic vinegar.
Add the butter to soften and then after about 5 mins add the chopped tomatoes and stir in.
Chop the beetroot and add to the pan along with the spinach.
Whilst this is cooking add boiling water to the bowl of couscous and cover until cooked.
Add the cooked couscous to the mixture along with the cream cheese.
Stir in the sweet chilli dip and salt to taste and mix everything together.

To serve:

Spoon mixture into a small bowl and pack it in tightly.
Drizzle a white plate with balsamic syrup and then tip the bowl into the centre of the plate
decorate with a few spinach leaves.

POSH GRUB MADE EASY.

This would be a nice side dish to a main course or simply yummy on it's own.
It tastes delicious cold as well.
Add stuff like sweetcorn or even chopped up bacon if you like.
Voila.
